Food is an essential component of our daily lives. As food makes the journey from the farm to the table to giving us energy in our bodies, it creates and interacts with a broad variety of chemical, biological, economic, social, political, and cultural issues.

 

Food for Thought is Cluster 9 of the UNCA Integrative Liberal Studies (ILS) Topical Clusters. In this cluster, UNCA faculty aim to work together with students to better understand the interconnectedness of our lives with food and to develop as informed food consumers.

 

 

By providing multidisciplinary courses, students will be engaged in topics that include:

á      the chemistry of cooking

á      laypersonsÕ interpretation of food labels

á      the global economics of agriculture and food consumption

á      how the food industry affects food policy and cultural eating norms

á      how food and nutrition affects health and disease and our self-identity

 

Cluster participants will have hands-on involvement through service-learning projects of nutrition promotion with community organizations and through laboratory experimentation of the chemical and physical properties of food and cooking.

 

Food for Thought was envisioned by four faculty members at UNCA.
